Thai Chicken & Peanut Curry

Easy red Thai curry that is delicious and will not disappoint.

Ingredients
1 tbsp vegetable oil
5 spring onions sliced in 1 1/2 lengths (quartered), including greens
1 - 1 1/2 cups coriander , leaves picked and stalks finely chopped
400g chicken , sliced
4 tbsp Thai red curry paste
4 tbsp peanut butter
1/2 tbsp soft brown sugar
1 tbsp soy sauce
400 ml can light coconut milk
1 cup mushrooms halved
1 red pepper cut into strips
Juice of a 1/2 lime
Coriander leaves to garnish
Steamed rice (jasmine or basmati)
Instructions
  1. Heat the oil in a large saucepan
  2. Add the spring onions and coriander stalks and cook for 1 min.
  3. Add the chicken and cook for 5 minutes on medium heat until chicken cooked through
  4. Add mushrooms and peppers and heat for 1 minute
  5. Stir in the curry paste and peanut butter and mix well
  6. Add the sugar, soy and coconut milk, plus ½ cup of water
  7. Mix well and cover to simmer for 15 minutes until sauce thickens a little.
  8. Squeeze in the juice of 1/2 a lime juice
  9. Serve with rice and garnish with coriander leaves
  10. Enjoy!
