Tart Dough

Simple delicious tart dough.  Use this recipe for the French Tomato Tart recipe.

Ingredients
1 1/2 cups flour
4 1/2 oz unsalted butter, chilled, cut into cubes
1/2 tsp salt
1 large egg
2-3 tbsp cold water
Instructions
  1. In a large bowl mix flour and salt
  2. Add butter and use your hands, or a pastry blender, to break in the butter until the mixture has a crumbly, cornmeal-like texture
  3. Beat the egg with 2 tbsp of cold water
  4. Make a well in the centre of the dry ingredients and add the beaten mixture, stirring the mixture until the dough holds together.  If it's not coming together easily, add additional tablespoon of cold water
  5. Gather the dough into a ball and roll the dough on a lightly floured surface adding additional flour only in necessary to keep the dough from sticking to the counter
  6. Roll the dough so that it is large enough to cover the tart pan and the sides
  7. Roll the dough around the rolling pin then unroll it over the tart pan
  8. "Dock" the bottom of the pastry firmly with your fingertips a few times, pressing to make indentations with your fingers
  9. The tart shell is now ready for your filling
  10. Enjoy!
