Nice alternative for baked salmon. Easy and healthy.  Prepared with homemade Sun Dried Tomato Dressing

Ingredients
4 salmon fillets
2 cups chopped baby spinach
1 cup sliced cremini mushrooms
1 tomato chopped
¼ cup sun-dried tomato vinaigrette
Instructions
  1. Preheat oven to 375F
  2. Mix spinach, mushrooms, tomato and sun-dried vinaigrette in a bowl
  3. Place salmon fillets in a baking dish/pan
  4. Spoon mixture over salmon
  5. Bake approximately 25 minutes
  6. Enjoy
