Ingredients
3 ½ lbs Fresh peaches – approx. 8-9 peaches
1 ½ Tbsp Fresh lemon juice
1 Tsp Cinnamon
¼ Tsp Ground allspice
3 ½ cups Sugar
Instructions
In a large pot bring water to a boil
Add peaches and cook for approximately 2 minutes to blanch
Peel peaches and remove the pit and place in a saucepan
Mash peaches in the saucepan
Add lemon juice, cinnamon and allspice and bring to a boil
Add all the sugar constantly stirring
Continue to cook boiling slowly for 5 minutes until thickened
Can be used immediately and served warm or place into small sealed containers and refrigerate for up to 3 weeks
