Pea Soup

Delicious traditional pea soup. Always a big hit with friends and family.

Ingredients
9 cups Chicken Broth
3 cups yellow split peas
1 ½ medium sized onions - diced
3 celery hearts (ribs) - diced
4 medium carrots diced
1 package maple bacon - diced
2 cloves garlic - diced
1 ham bone or package of ground ham
2 tbsp sugar
2 tbsp white vinegar
2 tbsp thyme (leaves only)
2 bay leaves
Instructions
  1. Turn stove on high heat
  2. In a large stock pot add bacon and cook until well done (do not burn)
  3. Add onions and celery. Sauté for a few minutes
  4. Add ham bone (or ground ham), split peas, carrots, garlic, thyme, sugar, bay leaves, and then add the chicken broth
  5. Bring pot to a boil, reduce heat to low and then cook for 2 hours
  6. After the 2 hours, remove the pot from the heat
  7. If applicable, remove the ham bone. Cut off the meat and chop into smaller pieces. Add pieces to the soup
  8. Add the white vinegar and mix the soup for a few minutes
  9. Enjoy!
