Mussels in Miso Broth

A nice change from traditional mussels recipes this broth is so delicious.

Ingredients
1 lb mussels (fresh)
2 tsp canola oil
1/2 onion, finely diced
1 clove garlic, minced
1 tsp fresh ginger, grated
1 tomato, diced
2 baby bok choy, chopped
1/2 cup baby spinach
2 cups vegetable broth
14g miso soup mix (package)
1 tsp Sriracha, or other hot chilli sauce
lime wedges
Instructions
  • Prepare mussels by removing beards, scrubbing shells and discarding any shells that do not open
  • Heat large saucepan (that has a lid) over medium-high heat and add canola oil
  • Add onions and saute for a couple of minutes
  • Add ginger and garlic and saute for 30 seconds
  • Add vegetable brother, miso soup mix and chilli sauce and turn heat to high
  • Add tomatoes, bok choy, spinach and mussels and stir together
  • Cover and allow to steam for 4 minutes, all mussels should be open
  • Discard any mussels that have not opened
  • Serve with a couple of lime wedges and your favourite bread
  • Enjoy!
