A delicious and simple spicy stir-fry dish made with chicken, peanuts, and chillies.  Couldn't be more easy!

Ingredients
2 chicken breasts, large, boneless, cut into cubes
1 tbsp cornstarch
2 tsp sesame oil
3 tbsp green onions (including green), chopped
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tsp crushed red pepper flakes
2 red chillies, seeds removed, finely chopped
2 tbsp rice wine vinegar
2 tbsp soy sauce
2 tsp sugar
2/3 cup peanuts, unsalted
Instructions
  • In a bowl combine chicken and cornstarch and coat well
  • Using a large skillet heat oil (medium heat)
  • Add chicken and gentle fry until cooked through
  • Remove chicken and set aside
  • Add onions, garlic, red pepper flakes, red chillies and ginger and saute for 1 minute
  • In a small bowl add vinegar, soy sauce and sugar and blend well then add skillet
  • Add cooked chicken and stir well
  • Add peanuts
  • Continue to heat for a few minutes until all ingredients are thoroughly heated
  • Serve with your favourite rice
  • Enjoy!
