Arugula Pesto with Sun-Dried Tomatoes and Pine Nuts

A different twist to pesto made with fresh flavourful arugula leaves, garlic, olive oil, pine nuts, sun-dried tomatoes and garnished with Parmesan cheese.

Ingredients
8 oz pasta (your favourite choice)
5 oz arugula
2-3 garlic cloves
1/2 tsp lemon juice (fresh)
1/3 cup pine nuts, toasted
1/3 cup olive oil
1/2 cup sun-dried tomatoes, drained, thinly sliced
Instructions
  1. Using a food processor add arugula, garlic (peeled), lemon juice, olive oil and 1/4 cup of pine nuts
  2. Blend for approximately 2 minutes
  3. Season with salt & pepper and quickly blend for a few more seconds and set aside
  4. Cook pasta according to directions
  5. Drain pasta and return to pot
  6. Add arugula pesto, remaining pine nuts and sun dried tomatoes and combine
  7. Serve on a warm plate garnished with fresh Parmesan cheese
  8. Enjoy!
