These Apple Raisin Nut Bran Muffins are moist, healthy and delicious. Packed full of flavor that everyone will enjoy. Didn’t have time to let cool before they were all gone!

Ingredients
¾ cup all-purpose flour
¾ cup whole wheat flour
1 cup bran
1/4 cup flax seed (optional)
½ cup brown sugar
1 tbsp baking powder
1 tsp baking soda
1 ½ tsp cinnamon
½ tsp nutmeg
½ tsp salt
2 eggs
¼ cup vegetable oil (or similar)
¾ cup apple juice (fresher the better)
1 tsp vanilla
1 ½ apples chopped
½ cup raisins
1/3 cup chopped walnuts
Instructions
  1. Preheat oven to 375F
  2. Using a large bowl mix all dry ingredients together. Be sure brown sugar is nice and loose
  3. In another bowl mix eggs, oil, vanilla and apple juice
  4. Pour over dry ingredients and mix gently (not too much)
  5. Add apples and raisin and mix until integrated. Do not over mix
  6. Spoon mixture into a greased muffin
  7. Bake 15 minutes
  8. Let cool and enjoy!
