Delicious and simple recipe for Apple Oatmeal cookies. A nice change from other popular apple recipes such as pies and muffins.

Ingredients
3/4 cup butter softened / canola oil (equal parts)
2 eggs
1 1/2 tsp vanilla
1/2 cup brown sugar
1 cup sugar
1 3/4 cups whole wheat flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt
2 cups oats
1 1/2 large apples, peeled and grated
Icing (optional)
1 cup icing sugar
1 1/2 tbsp apple juice (or milk/water)
Instructions
Preheat oven to 375F
Using a large bowl beat butter, oil, eggs, sugar, brown sugar, and vanilla until mixed well
In a separate bowl mix flour, cinnamon, salt and baking soda until mixed well
Gradually add dry ingredients to the wet mixture and blend
Add oats and grated apple continue to mix
Using a parchment covered cookie sheet spoon approximately 1 tablespoon of dough onto cookie sheet
Bake for about 10-12 minutes
Remove from oven and allow to cool a couple of minutes before placing on cooling racks
To drizzle icing on the cookies mix icing sugar and apple juice and whisk until spoon. Drizzle or using a small plastic bag pour icing into the bag and cut a small corner and "pipe" the icing over the cookies and allow to cool.
